Tom Yum noodles ( Kway Teow Tom Yum)

Give a bowl of plain noodles soup to the Thais—we turn up the heat and spin it into Tom Yum soup! This is the story of our Thai-Chinese fusion bowl of joy.
A simple dish that requires time to enrich the flavours of the broth before adding the explosive Tom Yum seasoning of lime juice, fish sauce, roasted chillies flakes and sugar, producing a punchy soup packed with a multitude of contrasting flavours.
Kway Teow is a Hokkien Chinese word for flat rice noodles that became a household name in Thailand in mid 19th century when millions of Chinese emigrated to South East Asian countries.
Below is a list of things to prepare before you can assemble your Noodle soup; the broth, flavoured pork, flat noodles and some vegetables.
Homemade Chicken Broth
It is based on the left-overs of a roast chicken, which we occasionally have as our Sunday roast. I usually put the carcass in a large saucepan with a peeled whole onion, cut in half, a tablespoon of peppercorns, a stick of celery, a garlic clove, a carrot and 1 tsp of salt. Let it simmer gently for 3-4 hours with the lid slightly ajar.
If you have a chance to go to an Asian supermarket, there is a soup/broth herb pack which contains necessary Chinese herbs and spices. Add a pack in the broth and continue with the rest. It is healthy, aromatic and enriches the flavours of the soup.
Ingredients for marinating the minced pork
250g minced pork
3 cloves of garlic chopped
1/2 tsp of white pepper
2 tbsp of light soy sauce
Mix everything together and keep in the fridge for 20 minutes or longer. if time allows.When ready, put the pork into a small sauce pan with 3 tablespoons of water and cook on medium heat until the pork is cooked through.
Ingredients for the noodles soup
Flat rice noodles ( Away Teow) prepare according to the package.
Pak Choi blanched in hot water for 2 minutes
Bean spout blanched in hot water for 1 minutes
Tofu ( optional) diced
Spring onions chopped
Coriander chopped
Tom Yum seasoning for one bowl of noodles soup.
2tsp chopped peanuts
2 tbsp sugar
4 tsp fish sauce
1 1/2 tbsp lime juice
1/2 tsp roasted Thai chilli flake ( less if you don’t like it spicy)
Mix everything together in a serving bowl.
Assemble a bowl of Tom Yam Noodle
In a serving bowl, mix Tom Yum seasoning together.
Then add small portion of cooked flat rice noodles.
Top with Pak Choi, bean sprouts, tofu, cooked minced pork.
Add a big ladle of broth.
