Thai Green curry paste

Ingredients ( for 2 medium-size pot of green curry)

10-15 birds eye green chillis

3 Thai red shallots

9 Thai garlics

1 tsp chopped galangal

1 tbsp chopped lemongrass

1/2 tsp finely chopped zest of kaffir lime

1 tsp chopped coriander roots

5 white pepper corns

1 tsp coriander seeds, roasted

1 tsp ground cumin

1 tsp of fresh turmeric ( optional) I like to add it as it gives a very nice colour

1 tsp shrimp paste ( Gra-Pi)

1 tsp sea salt


Blitz everything together in a food processor. Keep it in a sterilised jar with air-tight lid.

Making curry paste by hand using pestle in mortar gives a better result. Natural oil in spices will be released as you press and pound, making it moist with incredible aroma. To ease the physical demand of this task, chop everything finely first then it won't so hard to grind it to fine paste. Do it in the following order, making sure each step is well blended before adding the next ingredients.

  1. salt and chillies

  2. galangal, lemongrass, zest of kaffir limes, and coriander roots

  3. garlics, shallots, coriander seeds, cumin, and white pepper corns

  4. finally add the the shrimp paste
