Thai BBQ chicken

This is probably the most popular street food in Thailand. It is a winning combo of sweet, salty and herby, which explodes to an intensely appetising flavour and flagrant once it hits the flame. It is not a dish achieved in a rush. Check the weather forecast, marinade overnight and grill! 




To marinade for 500g chicken pieces, bone in , skin on.

  • 2 cloves of garlic

  • an inch of ginger sliced

  • a mild red chilli ( optional)

  • a table spoon of chopped coriander 

  • 5 white peppercorns

  • 2 tbsp oyster sauce

  • 2 tbsp soy sauce ( I use Kikkoman less salt) 

  • 2-3 tbsp runny honey



Pound all dried ingredients in pestle and mortar until finely mixed. Then gradually add all the liquid ingredients. 

Mix the chickens and the marinade together in a large food bag. Tie the bag tightly and massage and roll the bag to ensure the chicken pieces are well coated. Leave the bag in the fridge overnight. 


Remove the chickens from the marinade. Baste the chickens with the marinade as you grill and turn.
