Soft and chewy Chocolate chip cookies
We stopped buying chocolate chip cookies as no shop-bought brands I tried beat this homemade version. When you bake cookies for your own consumption, you get to choose the best quality butter or chocolate that go into your mixer. These cookies are soft and chewy in the middle, oozing with melted chocolate of your choice.This is a good base for all variations you fancy. I prefer mine with dark chocolate chips and some nuts. The children like theirs with milk or white chocolate chips. Play around with it and see which version is yours. But whatever you do, don't over bake these. We want to keep soft chewy texture in the middle.

Ingredients
150g salted butter, softened
80g light brown sugar
70g granulated sugar
2 tsp vanilla extract
1 large egg
225g plain flour
1/2 tsp bicarbonate of soda
1/4 salt
200g chocolate chips of your choice
Method
Heat the oven to 190c/fan 170c and line two baking trays with a piece of baking paper.
Beat the butter and sugar until light and creamy
Add vanilla extract and the beaten egg.
Sift in the flour, salt and bicarbonate of soda. Fold in gently with large metal spoon until well combined.
Use a tablespoon to scoop up the batter and drop it on the prepared baking tray, giving some space for the next spoon. This should make 25 cookies.
Bake for 8-10 mintues
Leave on the tray for a few minutes before removing them onto a wire rack.
