Persian spiced lamb wraps with grilled Halloumi and spicy mayo

When you have roast lamb leftover, spice the lamb up with some Persian seasoning to refresh and warm up the meat. Add an grilled Halloumi slices and salad. It is an easy and delicious way of eating the same meat in a new outfit.
Slice your lamb joint very thinly and dress it with juice of a lemon, a pinch of cayenne pepper, a pitch each of cumin and sumac*. Saute it quickly in a pan to refresh it with the spices.
Slice Halloumi thinly and put them on a griddle pan until charred on both sides.
Mix a regular mayo with Sriracha sauce.
Pile everything together in a warm flatbread top with the spicy mayo,
*Sumac is a tangy lemony flavour spice from the Middle East
