Panang curry paste

Ingredients

  1. 5 long dry Thai chillies deseeded and soak in water

  2. 5 Thai red shallots, sliced

  3. 10 Thai garlics ( or 5 normal garlics) chopped

  4. 1 tbsp Galanga chopped

  5. 1 tsp lemon grass chopped

  6. 1/2 rind of kaffir ( This is difficult to find. Look out for dry or ground )

  7. 1 tsp fresh roots of coriander. ( ground if you can't find fresh)

  8. 1/2 ground white pepper

  9. 1 tsp salt

  10. 1 tsp shrimp paste


`Method

  1. Drain the soak chillies and roughly chop.

  2. Put everything in a blender except the shrimp paste.

  3. Once everything blend together add the shrimp paste.Blitz or pound it until well blend.

If you use pestle and mortar, pound ingredients together in the following order, making sure each ingredient blends well before you add the next.

  1. drain soaked chillies and salt

  2. galanga

  3. lemon grass

  4. rind of kaffir

  5. roots of coriander

  6. garlics

  7. shallots

  8. white pepper

  9. shrimp paste
