An easy chocolate cake. This recipe was created to make it easy for my son to whip up a chocolate cake when he wants. Instead of plan flour, self-raising flour is used. So there is no need for a baking powder. It is weighing and throwing all the ingredients in a mixing bowl and beat it. The glazing is luxurious and requires the best dark chocolate you can get but much easier to make than butter cream.
For the cake
200g milk chocolate melted.
175g butter, softened
200g caster sugar
175g self-raising flour
For the glaze
90g dark chocolate, finely chopped
75g caster sugar
For the cake, put the chocolate in a bowl and melt in the microwave on low for 3 minutes. Stir.
Put butter, sugar, eggs and flour in a mixing bowl and beat for 3 minutes until well mixed.
Stir in the melted chocolate until it is evenly mixed in.
Tip the mixture in a greased and lined round cake tin.
Bake in 170c oven for 50 minutes.
For the glaze, in a small pan, heat the sugar 40ml water , stirring to dissolve. Turn the the heat up and bubble for 3 minutes. Stir in 90g chocolate, stirring to melt then leave for 5 minutes or just warm.
Pour the glaze over the top of the cake sommothing it over the sides.
Leave to set for 20 minutes.
