Cashew date energy balls

A low sugar snack packed with protein, calcium and iron. Cashew kernels and dates are the star ingredients. Cashews are great sauces of protein and antioxidant. Dates contain some important vitamins and minerals in addition to a significant amount of fibre. Both cashew and dates are high in calories which are perfect to refule athelete's demands without the bulk. For non-athletes, a small ball is just enough to tame the sweet cravings with some health benefits. Perfect with a coffee!

Ingredients ( Make 12 balls)

  • 2 tbsp coconut oil melted

  • 2 tbsp cashew butter or peanut butter

  • 1 tbsp maple syrup or honey

  • 1/2 tsp ground cinnamon

  • 100g cashew kernels, grinded

  • 40g desiccated coconut

  • 100g stoned dates


Method

  1. Mix the coconut oil with nut butter, syrup and ground cinnamon. Stir until smooth.

  2. Mix the grinded cashews with half of the coconut.

  3. Chop the dates in the food processor. ( add a some water if it gets to sticky)

  4. Mix everything together and chill in the fridge for half and hour.

  5. Roll the mixture into 12 equal sized balls.

  6. Coat each ball thinly with the rest of the coconut.
