If you love beetroots you will enjoy this simple side dish. If you don't like beetroots, this might change your mind. Serve chilled and it is delicious and healthy with flatbreads.
a pinch of caster sugar
1tbs coconut oil
1tsp yellow mustard seeds
a pinch of curry leaves
1/2 tsp grated fresh ginger
2 cooked beetroot chopped
Combine yogurt with salt& pepper, sugar in a bowl.
Heat the oil in a small pan then add mustard seeds, when they begin to pop add ginger and curry leaves, lid on quickly as the seeds will go wild. Lower the heat and cook for a few seconds. Turn off the heat. Let it cool.
Mix everything in with the yoghurt.
