Banana Breakfast Muffins

A little healthy treat in the morning. These muffins starts your day with a healthy carbohydrate and naturally sweetness from Bananas. If your bananas are super ripe, you can lower the quantity of the sugar. I am not a fan of very heavy and dense banana cakes or bread. These are soft and spongy, a real joy with a cup of tea.

I have an athlete at home. To meet the demand of 20g protein intake in a meal, I substitute a scoop of flour with with a scoop of whey protein powder. These then turns into high protein pre-workout breakfast.

Banana Muffins




  1. 275g self-raising cake flour ( I use #mcdougalls supreme sponge self-raising flour)

  2. A pitch of salt

  3. 4 eggs

  4. 250g mashed bananas

  5. 185g sugar

  6. 1tsp vanilla extract

  7. 1 cup of melted butter

  8. 1 tsp bicarbonate soda



  1. Beat the eggs and sugar on high speed until light and fluffy. ( It is important to get tthe air in for fluffy muffins).

  2. Mix in salt and vanilla extract ( from now on keep the mixer at low speed).

  3. Sift in the flour and bicarbonate soda mix well.

  4. Add melted butter and gently blend it in.

  5. Add the mashed bananas. Mix well but gently.You should end up with a thick batter.

  6. Pour in your muffin cases 3/4 full and bake at 160c Fan or 180c traditional oven for 20-25 minutes.
